Cindy’s  Ultimate  Gluten-Free Cheesy Macaroni Baked Ingredients!


1 - 12 oz box of gluten-free macaroni noodles ( I prefer Barilla Gluten-free)

2 eggs whisked

2 - 12 oz cans of evaporated milk

1 teaspoon salt

½ teaspoon black pepper

4 cups sharp cheddar cheese

2 cups sharp cheddar cheese for topping

1 ¼ cup shredded parmesan  cheese

1 cup cubed Velveeta

1 cup shredded Gruyere (I love smoked if I can find it)

½ cup melted butter


Let's Get Started!


Preheat the oven to 400.

Whisk eggs, evaporated milk, salt, and pepper in a large bowl until thoroughly combined.


Boil the pasta according to the box’s directions in a large pot. You want it “al dente,” not mushy. Make sure you salt the water.


Once the pasta is cooked, drain the water and return it to the pot. Pour the melted butter over the pasta and stir until the butter covers all of it.


Stir the milk and egg mixture a few times, then add it to the pasta.


Add all the cheese except the 2 cups of shredded sharp cheddar cheese to the pot. Stir over medium heat until the cheese is melted. ***  Cindy recommends adding the cheese a little at a time to get it melted.   

Spray a 9 x 13 baking dish with cooking spray of your choice.


Pour the macaroni and cheese into the baking dish.  Sprinkle with 2 cups of shredded sharp cheddar cheese and bake for 20-25 minutes.
